Bacon Tomato Bagel Melts

 

2 bagels, split and toasted

8 tomato slices

8 bacon strips, cooked

1 cup (4 ounces) shredded mozzarella cheese

Prepared ranch salad dressing

 

Place bagel halves cut side up on baking sheet.  Top each with two tomato slices and two bacon strips.  Sprinkle with cheese.  Broil 1-2 minutes or until cheese begins to brown.  Serve with ranch dressing.

 

 

 

 

 

 

Black Bean Taco Salad

 

2 - 15 oz. cans Black Beans, rinsed and drained

1 - 2 ¼ oz. can sliced ripe olives, drained

2 medium tomatoes, chopped

4 medium green onions, chopped

1/3 cup shredded Cheddar cheese

¼ cup chopped fresh cilantro

2 Tbsp lime juice

1 tsp ground cumin or chili powder

¼ tsp pepper

4 cup chopped spinach (6 oz.)

 

Mix beans, olives, tomatoes, onions, cheese and cilantro in a large bowl.  Mix lime juice, cumin or chili powder, and pepper; toss with bean mixture.  Serve on spinach.

 

 

 

 

Cheesy Mustard Ham Grill

 

8 bread slices

Dijon Mustard

8 oz. VELVEETA Cheese Product

4 slices of you favorite deli ham

Butter

 

Spread bread slices with Dijon Mustard.  Top each of 4 bread slices with 2 oz. of VELVEETA Cheese Product, sliced; 1 slice of ham and second slice of bread.  Spread outside of sandwiches with softened butter.  Cook in skillet on medium heat until lightly browned on both sides.

 

 

 

Grilled Roast Beef Sandwiches

 

1 can (4.5 oz) chopped green chilies, drained

2 Tbsp mayonnaise                   1 Tbsp Dijon mustard

10 slices rye bread                    5 slices Swiss Cheese

10 slices cooked roast beef       2 Tbsp butter

Salsa or picante sauce, optional

 

Combine chilies, mayonnaise, and mustard; spread about 1 Tbsp. on one side of each slice of bread.  Top half of the bread with one slice of cheese and two slices of beef.  Cover with remaining bread.  Butter the outsides of bread. Grill sandwiches in a large skillet over medium heat until both sides are golden brown and the cheese is melted.  Serve with salsa or picante sauce if desired.

 

 

 

Pepperoni Caesar Salad

 

1/3 cup olive oil

2 Tbsp red wine vinegar or apple cider vinegar

2 Tbsp mayonnaise                   2 garlic cloves, minced

½ tsp Dijon mustard                  ¼ tsp Worcestershire sauce

¼ tsp pepper                                      8 cups torn Romaine

1 cup sliced pepperoni, halved

1 ½ cups Caesar salad croutons

¼ cup shredded Parmesan cheese

 

In a small bowl, combine the oil, vinegar, mayonnaise, garlic, mustard, Worcestershire sauce and pepper; set aside.  In a large salad bowl, combine the romaine and pepperoni.  Drizzle with dressing; sprinkle with croutons and Parmesan.  Serve immediately.

 

 

 

Quick Fix Quesadillas

 

6-8 flour tortillas, 6”

 

All toppings are optional – create to your taste!

Your choice of shredded cheese

Green onions, thinly sliced

Fresh tomatoes, diced

Salsa

Sour Cream

Refried Beans

Green or Red Peppers, diced

Salt and pepper to taste

 

Heat tortillas until soft.  Place toppings on ½ of each tortilla.  Fold tortillas in half, place on baking sheets, and broil until cheese melts.

 

 

 

Roast Beef Cheddar Melt

Your favorite Cheddar Cheese

Onion Rolls

 

Heat Miller’s Store Roast Beef from the deli and melt your favorite cheddar cheese on top.  Serve on Onion Rolls.   Simple and delicious!

 

 

 

Reuben Sandwich

 

8-12 Slices rye bread       ¾ -1 lb. thinly sliced corned beef

4-6 slices Swiss cheese    ⅓ cup melted butter

2-3 Tbsp. Catsup            Salt and pepper to taste

1 – 1 ½ cups sauerkraut, rinsed and well drained

4-6 Tbsp. Thousand Island Dressing    (Serves 4-6)

 

Turn skillet on medium-high heat.  Butter one side of each bread slice.  Season sauerkraut with salt and pepper and mix the catsup with the Thousand Island dressing.  Spread dressing mix over non-buttered sides of bread.  Place bread buttered side down in skillet.  Top each slice with corned beef, sauerkraut, and a cheese slice.  Top each sandwich with other slice of bread, buttered side up.  When the first slice of bread browns, flip over and brown the other side.  (Make in a toaster oven or George Foreman Grill as well.)

 

 

 

 

Sandy’s Tuna Melts

 

1 can of tuna                             6-8 slices of bread, toasted

2-3 tbsp. of mayonnaise            6-8 slices of cheese

1 tbsp. pickle relish                   tomato, sliced - optional

1 tbsp. minced onion               

1 stalk of celery minced

 

In a bowl combine ingredients and mix well.  Spread on toasted bread.  If you like, add a slice of fresh tomato.  Top with your favorite sliced cheese from the deli.  Bake at 350º on tephlon cookie sheet until the cheese is melted.  Delicious served with three bean salad from the deli.
